Description

Named after Sarah’s sister, for her strawberry blonde hair, Sophie is crafted from 100% Pinot Noir sourced from the Halcyon block. Carefully harvested slightly earlier than those destined for our The Halcyon Pinot Noir. Following hand-picking, the fruit undergoes gentle pressing and fermentation in a combination of concrete eggs and seasoned French oak. Sophie is promptly bottled after a brief maturation period to preserve its fresh, fruit-forward profile.
